Chocolate Coconut Clusters

These chocolate coconut clusters also have only 5 ingredients, are simple to make and kids love them! My kids eat these like candy…. in fact, they prefer these to candy! They taste like a mixture of almond joy bars and raw coconut macaroons, and are a dessert you can feel good about letting your kids have because they are packed with healthy fats!"

Ingredients

  • Topping:
  • 1 (5 oz) bag shredded coconut- unsweetened (*almost 2 cups)
  • 2/3 cup melted coconut oil
  • 1/2 cup almond butter (*I use cashew or sunflower seed butter)
  • 1 tsp vanilla
  • 1/2 cup cocoa nibs, optional (*not in original recipe, but makes them extra good!)
  • 1-2 cup dark chocolate or semi-sweet chocolate chips (*I use sugar-free,dairy-free)**see variation for homemade chocolate coating
  • 1 TBSP coconut oil
  • Variations(KC):
  • Homemade chocolate coating:
  • 1 cup coconut oil
  • 1/2 cup cocoa powder
  • 2-4 Tbsp pure maple syrup (or sweeten w/ vanilla stevia)

  • 1/4 cup cocoa powder
  • 2 Tbsp pure Maple Syrup, or to taste (or sweeten w/ vanilla stevia)

Preparation

Step 1

1. In medium bowl mix coconut, 2/3 cup melted coconut oil, vanilla, almond butter and cocoa nibs until well mixed.
2. Form into 1 inch balls and put on a plate (*I use parchment lined baking sheet).
3. Chill clusters until harden completely.
4. Once the clusters have hardened, melt the chocolate in a double boiler with 1 TBSP coconut oil until smooth.
5. Dip the clusters into the chocolate and put back on a plate or baking dish
6. Put them into refrigerator and eat once they get cold.
7. Enjoy the awesome mixture of crunchy chocolate shell and chewy coconut center!

Variations (by KC):
*Can layer in candy molds w/ coconut mixture between layers of chocolate.

*Make your own Chocolate Coating using: 1 cup coconut oil + 1/2 cup cocoa powder + 2-4 Tbsp pure maple syrup (or sweeten w/ stevia).

*No-Bake Cookies: use coconut flakes instead of shredded, and mix in 1/4 cocoa powder + 2 Tbsp. maple syrup(or sweeten w/ stevia). Leave off chocolate coating.
