Black Bean Salsa Spud

  • 4 medium potatoes
  • 1 can black beans, drained and rinsed
  • 16 ounces salsa, mild or medium
  • 1/2 tsp. garlic powder
  • 1 tsp. Dijon mustard
  • 1/2 tsp. cumin

PREPARATION

Bake the potatoes in the oven or microwave.
While the potatoes are cooking, sauté the black beans, garlic powder, Dijon
mustard, and ground cumin in a sauce pan over medium heat for five minutes. Top
each spud with black bean/salsa mixture.
