Chateaubriand (Beef Tenderloin)
- One 5 lb. beef tenderloin (center cut) **
- (I used two 2-1/2 lb. center cut tenderloins)
- Olive oil
- 1/2 tsp. each: salt, pepper, garlic powder and paprika
Let meat come to room temperature.
Preheat oven to 500 degrees.
Rub olive oil over meat surface, then rub meat surface with mixture of spices.
Turn oven down to 350 degrees and cook 20 minutes.
Turn oven off and let meat rest in oven for 10 minutes.
Carve across grain and arrange on serving platter.
Serve with Bernaise sauce.
