    Tablespoon Sugar

  • 1/2

    Teaspoon Table Salt

  • 1/3

    Cup Water

  • 2

    Sticks Cold Unsalted Butter

  • cut into 1/2" dices

  • 2 1/4

    Cup All Purpose Flour (Chilled)

Directions

Make sure all ingredients are cold. In small bowl dissolve sugar and salt into the water. Refrigerate until very cold. About 30 minutes. While waiting for mixture to chill also refrigerate butter, flour, mixer bowl and paddle. In chilled bowl, combine butter and flour. With fingers, mix butter and flour until well coated. Then beat the flour and butter with chilled beater about 30 seconds. Add water mixture and raise the speed to medium-low and beat until the mixture comes out in large chunks. Divide mixture in two pieces and gently pat into round discs. Wrap in plastic wrap and refrigerate for up to 1 day or freeze up to 3 months.
