Fried Halloumi with Lime and Caper Vinaigrette

Ingredients
- 2 T Olive Oil
- 2 T Flour
- Dressing
- 1 T White Wine Vinegar
- Juice and Zest of one lime
- 1 1/2 T Capers
- 1 Clove of Chopped Garlic
- 1 tsp Whole Grain Mustard
- 2 T Extra Virgin Olive Oil

Preparation
Step 1
Mix all dressing ingredients together. Heat oil in skillet over medium heat, when oil is hot press each slice of cheese into seasoned flour (S&P)to coat.
Add to skillet cook 1 minute on each side or until golden.
Serve on warm plate with dressing poured over with toasted pita.
or
Blasamic vinaigrette over cheese and watermelon slice.
