Darci's Sweet Potato Casserole

Ingredients

  • Topping:
  • 6 Medium Sweet Potatoes
  • 1/2 C Sugar
  • 1 tsp vanilla
  • 2 eggs
  • 1/2 C Butter
  • 1/3 C Brown sugar
  • 3 T butter
  • 3 T four
  • 1/3 C chopped pecans

Preparation

Step 1

Peel and cut up potatoes.

Boil until knife inserted comes out easily, drain.

Combine with sugar, vanilla, eggs, & butter. Pour into a greased 9 by 13 pan.

Mix topper ingredients separately and sprinkle the topping over the mixture in the pan.

Cook uncovered at 350 degrees.

NOTE: I found out one time that letting the sweet Potatoes cool really let made the dish lighter and fluffier. You can certainly make it right away but if time allows, let the potatoes cool to room temp then mix in the eggs and other ingredients for a different effect.
