Ingredients
- 1/2 c butter
- 3 c milk
- 4 c heavy cream
- 1 lb fresh crabmeat, picked clean
- 2 tsp salt
- cayenne pepper to taste
- 2 tbsp sherry (before serving)

Step 1
Melt butter in heavy saucepan. Slowly stir in milk. Let mixture simmer for 20 minutes, stirring frequently to prevent burning.
Pout cream into a large pot. Cook briskly until cream has thickened, about 15 minutes. Stir the cream into the milk mixture. Ad crabmeat and simmer for 30 minutes. Add salt and cayenne. Serve in bowls and add sherry.
