Ingredients
- 2 1/2 cups wheat bran
- 1 1/2 cups flour
- 1 t. salt
- 1 1/2 t. baking soda
- 2 eggs
- 1 1/2 cups buttermilk
- 1/2 cup sugar
- 1/4 cup molasses
- 2 1/2 T. shortening, melted
- 1/2 cup chopped raisins
Preparation
Step 1
Preheat oven to 350 degrees. Grease 18 muffin cups or use paper liners. Whisk bran, flour, sat and soda in mixing bowl. Set aside. Beat eggs; whisk in buttermilk, sugar, molasses and shortening until smooth. Stir in bran mixture along with raisins until no dry lumps remain. Pour into muffin tins, fill no more than 2/3 full.
Bake about 20 minutes or until toothpick comes out clean. Cool in pans for 10 minutes.
