Pineapple Bread Souffle

Modified from All Recipes based on reviews. Good as side dish with Ham or other meats and/or as dessert with ice cream as a pudding.
Ingredients
- 1/2 cup butter
- 3/4 cup white sugar
- 4 - 6 eggs
- 7-10 slices white bread, cut into 1 inch cubes (few days old the better)
- 1 (20 ounce) can crushed pineapple, drained

1.Preheat oven to 350 degrees F
2.Grease a 6x10 inch baking dish.
3.Cream the butter and sugar together in a mixing bowl until light and fluffy. Beat in the eggs one at a time. Stir in the bread cubes and pineapple until well blended. Pour the mixture into a greased baking dish or soufflé dish.
4. Sprinkle with either white or brown sugar evenly over the top.
5.Bake in preheated oven until bread points on top are golden brown, 45 to 60 minutes. Cool before serving.
OK to substitute Splenda white and brown sugar to reduce calories
