Banana Cinnamon Muffins

  • Topping:
  • 2/3 cup of sugar
  • 1/2 cup of vegetable oil
  • 2 eggs
  • 2/3 cup of mashed very ripe bananas
  • 1 teaspoon of vanilla
  • 1 2/3 cup of flour
  • 1 teaspoon of baking soda
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of cinnamon
  • 1/4 cup of sugar
  • 1/2 teaspoon of cinnamon
  • 1/4 cup of butter, melted


Cooking time 45mins


Step 1

Preheat over to 375.

Grease the bottoms only of a muffin pan.

In medium bowl, beat 2/3 cup of sugar, oil and eggs with wire whisk.

Stir in bananas and vanilla.

Stir in remaining ingredients, until just moistened.

Pour batter into cups.

BAke 17-21 minutes. Remove from pan to cooling rack.

In a small bowl mix the sugar and cinnamon for the topping.

Dip muffins into melted butter, then into sugar and cinnamon.
