Decadent Chocolate Cream Pie

  • 3 1/2 cups half-and-half
  • 2/3 cup plus 2 tbsp. sugar
  • 1/4 cup cornstarch
  • 9 egg yolks
  • 9 oz. semisweet chocolate,
  • finely chopped
  • 2 oz. unsweetened chocolate,
  • finely chopped
  • 2 1/2 tsp. vanilla extract
  • 2 c whipping cream for topping



Step 1

Whisk together the eggs, sugar, and cornstarch until blended in a microwave safe bowl. Stir in half-and-half. Cook in microwave 1 minute at a time. Stir well and continue at 1 minute intervals until the mixture becomes thick. This will take approximately 3-4 minutes. Immediately pour through a fine strainer to remove any lumps. Stir in the chocolate and the butter cut into small pieces into the mixture until the chocolate and butter has melted.

Cover with saran wrap to prevent skin. Cool in refrigerator for 3-4 hours. Scoop into favorite pie crust and top with sweetened whipped cream and chocolate shavings.
