Spanish Rice

Ingredients

  • 6 slices bacon, cut up
  • 1/4 C. finely chopped onion
  • 1/4 C. chopped green pepper
  • 3 C. cooked rice (1 C. uncooked)
  • 2 C. cooked tomatoes (1lb.)
  • 3/4 t. salt
  • 1/8 t. black pepper

Preparation

Step 1

In a large skillet fry bacon until crisp; remove from skillet, draining off most of fat. Add onion and green pepper to bacon fat; cook over medium heat until onion is yellow. Add bacon and remaining ingredients; cook uncovered over low heat about 15 min until flavors are blended and mixture is hot.
