My mom was famous for these noodles! The whole family looked forward to having these and Christmas and any other time of year she fixed them. It was always a treat!

Ingredients

  • 3 eggs
  • 3 T milk or cream
  • 1 tsp salt
  • Flour
  • Broth from a stewing hen

Preparation

Step 1

Beat eggs with a fork. Add flour until thick but not too hard to stir. Put blob of dough on heavily floured cutting board or counter. Sift more flour on top of dough and knead in more flour until it is a consistency that can be rolled out. Roll out as thin as possible. Sift more flour on top before rolling up. Slice into 1/4" slices and then unroll them.

Add noodles a few at a time to boiling broth. Stir to separate. Add salt and pepper to taste. Add chunked up chicken and cook until noodles are done, stirring frequently and over a med/low heat to avoid scorching.
