Ingredients
- 1 small chopped tomato
- 1 small chopped red pepper
- 2 thin sliced green onions
- 2/3 cp lime juice
- 2 tblp veg. oil
- 1/2 tsp grated lime peel
- 1/4 to 1/2 tsp cayenne pepper
- 1 salmon fillet (1 to 1 and 1/2 pds)

Preparation
Step 1
In a large resealable bag, combine the first seven ingred. mix well/ Cut salmon into 4 pieces, place into bag. Seal and turn to coat. Refrigerate for 30 min.
Drain and discard marinade from fish and veggies. Place each piece of salmon and 1/3 of veggies mixture on a piece of heavy duty foil. fold around. Grill, covered over medium heat for 15-20 min or until salmon flakes.
