Marinara Sauce

Dad does a variation of this, and it changes each time…..
This recipe was from the mother of someone at dad’s work.
There is no best right way....make it your own!

Ingredients

  • 1 Tbl olive oil
  • 1 large onion chopped (dad uses less)
  • 2 shallots (only used shallots once)
  • 2 cans (28oz) crushed tomatoes, 2 cans tomato paste
  • 1/2 tsp each basil & oregano
  • 1 Tbl sugar

Preparation

Step 1

Sauté onion and shallot in olive oil about 2 minutes.
Add tomatoes, paste, basil, oregano and sugar.

Bring to a boil and then simmer on low about 1 to ½ hours. Stir frequently.

Dad uses garden tomatoes and no paste. If it is not tomato season I use the crushed canned tomatoes. I put a little onion in the hot oil and cook a few minutes til translucent. Add a little chopped garlic and heat til almost browned. Add the chopped tomatoes. I use garden tomatoes but peel off skins and chop over a strainer so I keep the juice but remove as many seeds as I can. Add in some pinches of fresh basil, oregano salt & pepper. Cook as above.
