SAUSAGE EGG CASSEROLE

Ingredients

  • 3/4 lb pork sausage
  • 8 oz green chiles
  • 1 T butter
  • 1 c flour
  • 4 green onions, chopped
  • 1 tsp baking powder
  • 1/2 lb fresh sliced mushrooms
  • 10 eggs
  • 1/2 tsp salt
  • 16 oz cottage cheese
  • 1/3 c melted butter
  • 1 lb Monterey Jack shredded cheese

Preparation

Step 1

Cook sausage; drain. Cook onions and mushrooms in melted butter. Beat eggs until yellow. Add cheese, chilies, sausage and mushrooms and onions. Cover and refrigerate overnight. Lightly grease 13x9 pan. Sift flour, baking powder and salt. Stir in 1/3 c melted butter. Stir flour mixture into egg mixture. Pour into pan. 350, 40-50 minutes.
