KOREAN SESAME BEEF LETTUCE WRAPS

Ingredients

  • 1-1/4 lb. boneless beef sirlion tip
  • Tri-tip or eye round
  • 1/4 cup soy sauce
  • 3 tablespoons sugar
  • 2 tablespoons dark sesame oil
  • 2 tablespoons minced garlic
  • 2 tablespoons sliced green onions
  • 2 tablespoons sesame seeds toasted ground

Preparation

Step 1

(Heat small dry skillet over medium heat, add sesame seeds, shake skillet continuously until seeds are lightly browned, 1-2 minutes. Cool, grind in spice grinder or with mortar and pestle), 1/4 teaspoon salt, 1/4 teaspoon freshly ground pepper, 1-2 tablespoons vegetable oil, 1 head soft lettuce such as Bibb or Boston leaves separated.

Slice beef across the grain into very thin slices. Place between 2 pieces of plastic wrap, pound with flat side of meat mallet until very thin. Cut slices into 3-4” square pieces. Place beef and all remaining ingredients except vegetable oil and lettuce in large resealable plastic bag, seal bag. Turn to coat evenly. Refrigerate at least 2 hours or up to 24 hours turning occasionally.

Heat grill pan or heavy large skillet over medium-high heat until very hot. Add 1 tablespoon vegetable oil, heat until hot. Add beef in batches, cook 30-60 seconds or until browned, turning once and adding additional oil if necessary. Place on platter, pour any pan juices over beef. Serve with lettuce leaves for wrapping beef into packets.
