Ingredients

  • 1 cup cooked bulgur wheat (cook like rice – I added salt when cooking)
  • 1 can rinsed black beans
  • 1 can rinsed kidney beans (I skipped these)
  • 1 can drained corn
  • ½ cup chopped green or red onion
  • 1 chopped red bell pepper
  • 1 cup chopped cucumber (I skipped these)
  • I cup plum/cherry tomatoes (chopped)
  • I/2 cup goat cheese
  • 1 handful craisins
  • Dressing
  • ¼ cup red wine vinegar (I added a bit more)
  • 1 clove minced garlic
  • 1 tsp chili powder
  • Sea salt to taste
  • ¼ tsp crushed red pepper flakes
  • ¼ tsp ground black pepper
  • ½ cup liquid from either beans (or olive oil to taste)

Preparation

Step 1

Combine cooled bulgur with other ingredients (except goat cheese), mix well. Make dressing by mixing all ingredients. Shake or stir well. Add cheese to the top of salad mixture, pour dressing over top and mix well.
