Veggie Salsa

Ingredients

  • 1 can Bush' Black Beans
  • 1 can Shoepeg Corn
  • 2 cans Rotel Original
  • 1 Avocado (ripe)
  • 1 large Bell Pepper
  • 1 bunch Green Onions
  • 2 Garlic cloves
  • 1/2 C Cilantro
  • 1/4 C Lime Juice (fresh)
  • 2 Tbl Olive Oil (I use less)
  • 1 tsp Salt
  • 1 tsp Cumin

Preparation

Step 1

1. Drain & rinse the Bush's Black Beans

2. Drain the can of Shoepeg Corn

3. Drain one can of the Rotel Original and drain 1/2 of the other can

4. Chop and remove seeds from the Bell Pepper

5. Peel & chop Avocado

6. Chop the Green Onion bunch and Cilantro

Mix all together and chill 6-8 hours.

Serve with tortilla chips
