Sweet Potato Scallion Pancake

Ingredients
- 1 pound sweet potatoes- peeled and shredded
- half a bunch of scallions diced small-white and green parts
- 3 eggs beaten
- 1/8 tsp cayenne pepper
- 1 tsp salt
- 1/4 cup flour (any kind you have, I used garbanzo bean flour)

Preparation
Step 1
mix everything together (except the oil) and fry like pancakes (about 3-4 minutes each side). Keep pancakes on a baking sheet in the oven (set at 200) while you fry them all up.
There are many ways to enjoy these but here are a few ways I like to eat them:
*a side dish to any meal
*reheated for breakfast with some apple sauce and sour cream on top
*dipped in soup instead of toasted bread
*a quick snack after the gym or workout
*sandwiching a burger instead of a bun
