Pineapple Zucchini Cake

Ingredients

  • 2 c. sugar
  • 1 1/2 c. salad oil
  • 3 eggs
  • 2 c. grated zucchini
  • 1 c crushed pineapple (drained)
  • 1 c. walnuts
  • 3 c. flour
  • 1 t. salt
  • 1 t. vanilla
  • 1 t. soda
  • 1 t. cinnamon

Preparation

Step 1

Beat sugar, oil and eggs until smooth.

Add zucchini and pineapple.

Stir in dry ingredients.

Stir in walnuts.

Bake at 350 degrees for 50 to 60 minutes in a floured
greased 9 X 13 pan. Cool and frost with Cream Cheese Frosting.

FROSTING:

1/2 c. butter
4 oz cream cheese

Beat until smooth, add 1 t. vanilla.

Sprinkle chopped walnuts over frosted cake.
