Cheesy Carbonara Risotto

Ingredients
- 1 cup rice
- 2 1/4 cups water
- 1 teaspoon butter
- 1/2 teaspoon salt
- 1/2 pound lean bacon strips, chopped
- 1 cup sliced mushrooms
- 1/2 package (250 g) light cream cheese, cubed
- 1/4 cup grated Parmesan cheese
- 1/3 cup boiling water (optional)
Preparation
Step 1
1. Combine rice, water, butter, and salt in a medium saucepan; bring to a boil over high heat. Stir, cover, and simmer over medium low heat for 15 minutes. Remove from heat and let stand, covered, for 5 minutes.
2. Meanwhile, heat a large nonstick frypan over medium heat and saute bacon until almost crispy. Drain excess fat. Add mushrooms; saute 5 minutes, or until mushrooms are softened.
3. Add rice to bacon and mushrooms. Stir in cheeses. If desired, add boiling water for added creaminess. Serve immediately. Makes 4 cups.
