Ingredients

  • 1 1/2 lbs chicken breast (i like tenders)
  • salt and pepper.
  • 2 t evoo
  • 5 t butter, divided
  • 3/4 c chopped onion
  • 2 t minced garlic
  • 1 c marsala wine
  • 1 c mascarpone
  • 2 t dijon
  • 2 t chopped, fresh parsley
  • package of fettuccine (cooked)

Preparation

Step 1

1) sprinkle chicken with salt and pepepr. heat oil in skillet over high heat. add chicken and cook til brown, about 4 minutes per side. transfer chicken to plate to cool slightly

2) while chicken cools, melt 2t butter in same pan over medium high heat., add onion and saute about 2 minutes til tender. add garlic and saute til juices begin to evaporate

3) add wine, simmer til reduced by half, about 4 minutes. meanwhile mix mascarpone and mustard together. add this mixture to onions and garlic

4) return chicken and juices to skillet. simmer over medium low heat til chicken is cooked and sauce thickens, about 2 minutes

5) stir in chopped parsley, season with salt and pepper if desired

6) spoon mixture over top of fettuccine
