  • Frosting:
  • 3 eggs, beaten
  • 1 c sugar
  • 2/3 c pumpkin pie filling
  • 1 tsp lemon juice
  • 3/4 c flour
  • 2 tsp cinnamon
  • 1 tsp soda
  • 1 tsp ginger
  • 1/2 tsp salt
  • 1/2 tsp nutmeg
  • 1 c pecans
  • 8 oz cream cheese
  • 4 T Crisco
  • 1/2 tsp vanilla
  • 1 c powdered sugar



Step 1

Mix eggs, sugar, pumpkin pie filling and lemon juice.

Mix flour, soda, cinnamon, ginger, salt and nutmeg.

Combine mixtures.

Grease and flour cookie sheet. Sprinkle with pecans. Pour mixture over pecans. Bake 375 degrees for 15 mins.

Sprinkle clean kitchen towel with powdered sugar. Remove cake from oven and while it is still hot, flip cake onto towel and roll it up in the towel. Let cool in fridge.

Mix frosting ingredients and once cake is cool, unroll and spread frosting on top and re-roll.
