Oma's apricot nut bars

  • 2 sticks butter
  • 1/3 c sugar
  • 5 egg yolks one at a time
  • 1 T vanilla
  • 2 1/2 c flour
  • 5 egg whites with pinch of salt
  • 1 c sugar
  • 1 T vanilla
  • 2 c chopped pecans
  • apricot jam



Step 1

Put base into 16x11 inch pan. Spread 1 c apricot jam.

Beat 5 egg whites into soft peaks. Add 1 c sugar, 2 T at a time and the vanilla. Beat till stiff and shiny. Fold in pecans. Spread over jam.

350 for about 30 or until topping is lightly brown
cool before cutting
