Spinach Ricotta Bites

Ingredients

  • 2 Tbsp Butter
  • 1 small Onion
  • 1 clove Garlic, minced
  • 2 Eggs
  • 1 cup Ricotta Cheese
  • 1/2 cup Shredded Mozarella
  • 1/2 cup Grated Parmesan
  • 10 oz Frozen Spinach, defrosted
  • 1/4 tsp Salt

Preparation

Step 1

Preheat oven to 350.
Melt the butter and cook the onion for 4 minutes.
Add garlic and cook 1 minute more.
Set aside.
Whisk 2 eggs, add cheeses.
Add spinach and drain well.
Add salt and reserved onions.
Divide among 20 greased mini-muffin cups.
Bake for 20-25 minutes.
