Ingredients
- 1 box Zatarain's Jambalaya Mix
- 1 onion, chopped
- 1 green pepper, chopped
- 3 green onions, sliced
- 1 cup celery, chopped
- 1 lb smoked sausage, chicken, andouille sausage
- pork chops or shrimp, cut into bite size
- 1 can Rotel tomatoes
- 1 can black olives, chopped
- 2 cups rice, long grain, uncooked

Preparation
Step 1
Use an 8 or 10 quart tall pot. Saute onion, pepper, green onion and celery until onions are clear. Add meat, cook until chicken is not pink anymore. Add tomatoes and cook for about 10 -15 minutes. Add ingredients of the box mix and the extra rice. Follow directions on the Zatarian box.
