Ingredients
- 3 cloves garlic
- 1/3 cup chopped roasted beets
- 1 cup white (cannellini) beans
- 2 tbsp lemon juice
- 2 tbsp olive oil
- coarse salt and pepper to taste
Preparation
Step 1
Roast beets in oven.
Puree chopped clove garlic in food processor.
Add roasted beets, white beans,lemon juice, and olive oil and pulse until smooth. Season with coarse salt and ground pepper.
Makes 6-1/4 cup servings
