Gluten Free Blueberry Pancakes

Just some yummy gluten free blueberry pancakes you must make ASAP.

Ingredients

  • ~ 1 cup of tapioca flour
  • ~ 1 cup of almond meal flour
  • ~ 1 cup of buckwheat flour
  • ~ 1/2 cup sugar
  • ~ 1-2 tsp of baking soda
  • ~ 1-2 tsp of vanilla
  • ~ 2 eggs
  • ~ 1/2-1 tbsp of cinnamon
  • ~ milk - dairy, almond, soy
  • ~ blueberries

Preparation

Step 1

1. Mix together dry ingredients, add eggs, and add milk to desired consistency, it should be similar to cake batter.
2. Pour pancake batter onto a skillet or a griddle in about 1/4-1/2 cup amounts. Grab some blueberries and drop onto the raw side of each cooking pancake.
3. Flip, finish cooking. Place cooked pancakes on a platter in a warm oven until finished and ready to serve.
4. Serve with real maple syrup and enjoy!
