BLT SALAD

  • 1/2-1 lb. bacon
  • 1/2 cup mayonnaise {4oz}
  • 2 tablespoons red wine vinegar
  • 1/4 c. fine chop basil or 1/4 tsp. dried
  • Salt and pepper
  • 1 lb. romaine lettuce
  • 1 pint cherry tomatoes, quartered

Preparation

Step 1

Cook bacon until crispy, drain, reserve 2 tablespoons drippings.

In a small bowl; whisk bacon drippings, mayonnaise, vinegar, basil, salt and pepper; let stand at room temperature. Prepare salad. In a large bowl pour dressing into bottom and add bacon, lettuce and tomatoes. Toss to coat. May also add cheese if desired.
