Ingredients
- 1 pkg (16oz) frozen tortellini pasta
- 2 tbsp margarine
- 3/4 cup heavy cream
- 1 (8oz) container ricotta
- 1 cup shredded mozzarella
- 2 tbsp grated Parmesan cheese
- 1/4 tsp ground black pepper
- 1/4 cup chopped fresh parsley
- 1/4 cup crumbled Gorgonzola or blue cheese
- Additional grated Parmesan cheese
Preparation
Step 1
1. In deep pan, over high heat, bring 2qts water to boil. Add tortellini; cook about 10 mins. Stir frequently until tender.
2. Meanwhile, in deep large skillet over medium low heat, melt butter. Add cream, ricotta, mozzarella, Parmesan and pepper. Cook 3-5 mins, stirring constantly until cheese are melted and mixture is blended.
3. Drain tortellini; add to skillet along with parsley. Stir until well mixed. Serve at once. Sprinkle with Gorgonzola and more grated Parmesan if desired.
