Ingredients
- Crust:
- 1 cup oats
- 1/2 cup flour
- 1/4 brown sugar, packed
- 1/4 tsp cinnamon
- 4 tbsp butter, softened
- Filling:
- 2 eggs
- 1/4 cup sugar
- 1/2 tsp vanilla
- 3/4 cup milk
- 3-4 apples, peeled & cut into slices
- Topping:
- 1/2 cup corn flakes, coarsely crushed
- 1/4 cup sugar
- 1 tsp apple pie spice
- 1/4 cup cold butter, cut in pieces
Preparation
Step 1
1. Crust: In a food processor combine all ingredients EXCEPT butter and give a few good chops until oats are ground. In a bowl combine butter and oat mixture and mix until dough is crumbly. Butter the bottom of a pie plate and press the dough to the bottom and sides. Place pan in the oven and bake 15 mins in a 350F oven or until crust is slightly golden.
2. Filling: Beat together eggs, sugar and vanilla. Beat in the milk until smooth. Arrange apples on the bottom of the crust and pour the filling into the crust. Sprinkle on topping and return to the oven for another 30-40 mins, or until the filling is set.
3. Topping: Combine all ingredients in a bowl, EXCEPT butter. Cut in butter until it resembles coarse crumbs. Sprinkle over top filling.
