MARINATED PEPPERS

Ingredients

  • 2 red, green and yellow peppers
  • 3 garlic cloves sliced
  • 2 tablespoons balsamic vinegar
  • 1/2 cup olive oil
  • 8 slices toasted bread
  • 1 teaspoon each chopped fresh basil and parsley
  • Salt and pepper to taste

Preparation

Step 1

Wash peppers and roast them whole in a 450 degree oven for 10-15 minutes until skins blister and blacken. Immediately transfer to holding pan and cover sealing with film. Let cool. When cool, peel and core and seed peppers. Season with remaining ingredients, cut into strips, serve with toasted bread.
