Grilled Shrimp Skewers
Mustard and lemon juice flavour tender shrimp in this easy recipe. You could use cubes of chicken or turkey instead of the shrimp.

- 2 tbsp olive oil
- 2 onions
- 2 tbsp lemon juice
- 2 tbsp gluten-free Dijon mustard
- 1/2 tsp dried thyme leaves
- 1 1/2 lbs large raw shrimp
- 1/2 tsp salt
- 1/8 tsp pepper

Step 1
1. Place olive oil in medium pan over medium heat. Cut onions into quarters, then cut each quarter in half to make 16 wedges. Cook in oil, turning carefully to keep the wedges together, 4-5 minutes to soften.
2. Remove pan from heat, then remove onions from pan and set aside. Add lemon juice, mustard, and thyme to olive oil and mix well. Add shrimp to stir and coat.
3. String shrimp and onion wedges on skewers; brush with any remaining mustard mixture and sprinkle with salt and pepper.
4. Cook 6" from broiler or medium coals, turning once, until shrimp curl and turn pink and onions are slightly charred. About 4-5 minutes. Serve immediately.
