Sweet Corn, Tomato and cucumber salad

Ingredients

  • 6 large ears of fresh corn
  • 2 large ripe tomatoes, seeded and chopped into 1/2"
  • slices
  • 1 medium cucumber, chopped into 1/2" cubes
  • 1 small onion, finely chopped
  • 1/3 C fresh parsley, finely chopped
  • 1/3 C fresh cilantro, finely chopped
  • f2 Tbl. fresh lemon or lime juice
  • salt and pepper to taste
  • Italian dressing

Preparation

Step 1

Microwave corn until done. Drain and cool. Cut each ear in half and remove kernels. This should produce about 3 cups. Combine corn kernels, tomatoes, cucumber, onion, parsley and cilantro in a large bowl. Add lemon juice and toss. Toss with 2 Tbl. Italian dressing. Season with salt and pepper. Cover and refrigerate until ready to eat.
