Crepe Expectations

Ingredients
- 2 c milk
- 1 c flour
- 3 eggs
- 1 T sugar
- 1 t vanilla
- 1/4 c melted, unsalted butter, plus for greasing

Preparation
Step 1
Combine all ingred in a mixer or blender and blend until smooth.
In med size skillet over med low heat, melt 1/2 t butter, ladle in 1/4 c batter. Swirl the skillet until you have a thinlayer of batter covering the entire bottom
Cook until the uinderside is golden brolwn, about 2 min. flp. Cook until the other side is golden brown, about 1 min
Add a filling, if desired right after flipping. Place ingred down the center of the crepes so you can fold in the sides like an envelope. If you aren't using a filling, cook all the crees, then put them on a plate in the middle of the table alongside bowls of fillings=jams, Nutella, whipppd cream, sauteed fruit, etc
dust with confectioners sugar before serving
