Ingredients
- 1 flank steak (about 1.5 lbs) or other flat boneless steak
- 2 tbls soy sauce
- 1/3 c. hoisin sauce
- 1/3 c. water
- 1/2 tsp red pepper flakes (or more to taste)
- 2 tbls vegetable oil
- 8 oz snow peas, stems snapped off and strings removed
- 4 garlic cloves, minced
- 1 tbls grated fresh ginger
- 1/2 c unsalted roasted cashews, chopped

Step 1
1. Cut steak lengthwise into 3 long strips, then cut each strip crosswise against grain into thin slices. Combine steak and soy sauce in bowl, cover, and refrigerate 15 minutes. Whisk hoisin sauce, water and pepper flakes together in another bowl.
2. Heat 2 teaspoons oil in large nonstick skillet over medium-high heat until just smoking. Cook half of steak until browned, about 1 minute per side. Transfer to clean bowl and repeat with additional 2 teaspoons oil and remaining beef.
3. Add remaining oil to empty skillet and heat until just smoking. Add snow peas and cook, stirring occasionally, for 2 minutes. Clear center of skillet and add garlic and ginger. Cook, mashing garlic mixture into pan, until fragrant, about 30 seconds. Stir garlic mixture into snow peas, then add steak, along with any accumulated juices. Add hoisin sauce mixture and cook until thickened, about 1 minute. Stir in cashews and serve.
