Ingredients
- 2 cups white grape juice, pineapple juice, guava nectar or apple juice
- 1 8-oz. can crushed pineapple (juice pack)
- 1/2 cup fresh blackberries, black or red raspberries and/or blueberries
- 1/2 cup sliced fresh strawberries
Preparation
Step 1
1. In a blender, combine juice and undrained crushed pineapple. Cover and blend until smooth. Divide blackberries and strawberries among twelve 4- to 6-ounce paper cups or freezer pop molds. Pour blended mixture over the fruit. Cover each with foil.
2. Use the tip of a sharp knife to make a slit in the foil in each of the foil tops. For handles, insert a flat wooden craft stick or plastic spoon into each cup through hole. (Or add sticks and cover pop molds.) Freeze about 6 hours or until firm. To serve, remove foil and tear off paper cups. Serve immediately. Or use frozen pops to make Tropical Berry Ice Cubes (recipe below). Makes 12 pops.
Berry Ice Cubes: Prepare Tropical Berry Pops as directed, except divide berries and juice mixture between two standard ice-cube trays; freeze firm. Transfer cubes to resealable freezer bags or freezer containers; freeze for up to 2 weeks. use to make Berry Super Smoothies (recipe below) or serve in beverages. Makes 30 cubes.
Berry Super Smoothies: In a blender, mix a large ripe banana; one 6-ounce carton vanilla fat-free yogurt and 3/4 cup fat-free milk. Remove foil, tear off paper cups and remove sticks from four of the Tropical Berry Pops or use 10 of the Berry ice Cubes. Add the pops or cubes to the blender. Cover and blend until the mixture is smooth. Pour mixture into three serving glasses. if you like, top each drink with a fresh mint sprig. Serve immediately. Makes 3 smoothies.
