Banana-chip mini cupcakes

Ingredients

  • 1 package banana quick bread and muffin mix
  • 3/4 cup of water
  • 1/3 cup sour cream
  • 1 egg
  • 1 cup mini semi-sweet chocolate chips (divided)
  • 1 tablespoon shortening

Step 1

In a large bowl,combine the muffin mix, mix, sour cream and egg. Stir just until moistened. Fold in 1/2 cup of chocolate chips.

Fill greased or paper-lined muffin cups 2/3's full. Bake at 375 for 12-15 minutes or until a toothpick comes out clean. Cool for about 5 minutes before removing from pans to wire rack to cool completely.

For frosting, in a microwave bowl, melt shortening and remaining chocolate chips; stir until smooth. Frost cupcakes.
