Becky's Amazing Taco Dip

A chilled, spicy taco dip to share with friends.

Ingredients

  • Spicy Mayo:
  • ~ 1 can Refried Beans
  • ~ 1 pound of Lean Ground Beef
  • ~ Shredded lettuce
  • ~ Shredded cheese, Mexican style and/or hot pepper, or?
  • ~ Black olives
  • ~ Chopped green onions (optional)
  • ~ 2 cups of Mayo
  • ~ 1 cup of salsa
  • ~ 2-4 tbsp of hot sauce
  • ~ Chipotle seasoning, like Mrs. Dash's Southwest Chipotle
  • Gluten Free Taco Seasoning
  • ~ 2 tsp garlic powder
  • ~ 1/2 tbsp salt
  • ~ 1 tbsp chili powder
  • ~ 1.5 tsp dried crushed red pepper
  • ~ 1.5 tsp ground cumin
  • ~ 1 tsp dried oregano
  • ~1.5 tsp corn starch or potato starch
  • ~ 1 tsp sugar, optional
  • ~ 2 tbsp onion powder, or add chopped green onions to ground beef (in all reality I forgot to add sugar and any onions & it was still awesome)

Preparation

Step 1

~ Mix ingredients for taco seasoning in a jar.
~ Begin browning ground beef, use some bacon fat for added flavor. When all beef chunks are no longer pink on the outside, drain the grease. Add about 1/2 cup of water and about 2/3 of the taco seasoning mix. Simmer until the water is gone and a nice sauce coats the beef.
~ Heat refried beans on the stove according to can instructions.
~ Spread refried beans in the bottom of a glass baking dish. Spread ground beef on top of beans and allow to cool completely.
~ While the beef & beans are cooling shred or chop your lettuce. Cut up black olives into quarters. Mix ingredients for spicy mayo (make sure you taste test!). Shred cheese if not already shredded.
~ Add lettuce on top of beef. Spoon spicy mayo on top of lettuce, as much or as little as you want.
~ Sprinkle with cheese and black olives. Allow to cool.
~ Scoop with tortilla chips or spoon onto a bed of tortilla chips and enjoy!
