QUICHE****Crustless Ham and Cheese Quiche - Slow Cooker

Ingredients
- 2 tsp. becel (for buttering the crock)
- 4 ounces chopped Grandpa or rosemary ham, 1/4" dice
- 3 large eggs
- 2 1/4 tsp. unbleached flour
- pinch of freshly grated nutmeg
- freshly ground black pepper
- sea salt to taste
- 1 tsp. fresh thyme, stripped from stems
- 2/3 cup less 2 tablespoons 1% milk
- 2 tablespoons heavy cream or creme fraiche (I used the cream)
- 3 oz. (85 g) diced Gruyere, Comte, or Emmental
Preparation
Step 1
Generously butter the insert of the large round slow cooker. Scatter the ham over the bottom.
In a bowl, measuring cup or glass jar, beat the eggs with the flour, nutmeg, salt and pepper until well blended. Add the cream to a measuring cup then add enough milk to make 2/3 cup in total. Beat in the milk and cream and add the thyme. Pour into the slow cooker. Scatter the cubed cheese over the top, (taking care to avoid the very edges of the cooker or the quiche will stick).
Cover and cook on high for 1 hour, 15 minutes. Reduce heat to low (don't open the lid) and cook for a further hour. Turn off the cooker, remove the lid and allow the quiche to rest for five or ten minutes. *Total cook time is 2 hours, 15 minutes.*
Cut into four pieces (while in the cooker - it's easier) then serve.
MAKE AHEAD:
I diced up the ham and the cheese and put them in separate baggies. I mixed the egg mixture together in a mason jar and refrigerated everything overnight, then brought the ingredients to room temperature before cooking.
