Ingredients
- 2 jars of Trader Joe’s salsa verde (or 1 qt of any other tomatillo sauce)
- 12 corn tortillas
- 4 C. roasted chicken, torn into strips or diced (use the chickens that are pre-roasted in the grocery store)
- 1 lb. mozzarella cheese, shredded (or a Mexican cheese blend)
- 1 C. half and half
Preparation
Step 1
Preheat oven to 450 degrees
Overlap 6 tortillas in the bottom of a 9x13” pan. Top tortillas with half of the chicken and half of the cheese. Pour 1 jar Salsa Verde evenly over. Top with remaining tortillas, chicken and mozzarella. Pour remaining sauce over, then all the half and half. Sprinkle with salt and pepper. Bake until bubbling about 25 minutes. Cool for 10 minutes. After serving, you can top with lettuce, tomatoes, black olives, sour cream and/or hot sauce.
