Overnight Bread

Makes one loaf

Ingredients

  • 3 cups flour . all purpose (360 grams)
  • 1/4 tsp instant yeast
  • 1 tsp + 1/4 more salt
  • 1/4 tsp red wine vinegar
  • 1 1/2 cups HOT water

Preparation

Step 1


Mix with hands flour, yeast, salt.
Add water
Mix with hand until blended

Let sit for 3-4 hours.

The dough will have a stringy texture.

Preheat oven to 500 degrees with covered baking pan inside oven

Pat the dough, fold in thirds to make a round.

Sprinkle wheat bran (or flour) on tea towel
Set dough seam side down on towel
Sprinkle wheat bran on top of dough

Cover with tea towel.
When oven reaches 500 degrees,
invert dough into hot pan, seam side up

Bake covered 25 - 30 minutes
Uncovered, 15 - 20 minutes

Internal temperature should reach about 200 degrees when done
