Ice Cream-Cookie Sandwiches

Ingredients
- 1/2 cup butter, softened
- 1 cup granulated sugar
- 1 large egg - yolk of 1 large egg
- 1 tsp. vanilla extract
- 1 1/4 cups flour
- 1/3 cup unsweetened cocoa powder
- 1 tsp. baking powder
- 1/2 tsp. salt
- 4 ounces semisweet chocolate, chopped, about 3/4 cup
- 3 pints vanilla ice cream, about 6 cups

Heat oven to 350 degrees. In large bowl, using electric mixer, beat butter and sugar until light and fluffy. Add egg, egg yolk, and vanilla; beat until creamy. In medium-size bowl mix flour, cocoa, baking powder and salt. Stir flour mixture into butter mixture; beat until just blended. Stir in chopped chocolate. Roll dough into 12 1 1/2-inch balls. Place 4 inches apart on well-greased baking sheets. Flatter each ball to diameter of 2 inches. Bake 18 to 20 minutes or until just set when touched in center. Remove to racks to cool thoroughly. Soften vanilla ice cream at room temperature about 5 min. Working quickly, spread about 1/2 cup softened ice cream on underside of 3 cookies; top each with another cookie; press down gently. Freeze until ready to serve. Make 6 large ice cream sandwiches.
