Ingredients
- For crust::
- 3 lobs ricotta
- 1 cup sugar
- 1 cup cooked rice (cooked in milk)
- (add rice to milk, bring to a boil then lower and simmer. 1 cup rice to 1/2 gallon milk simmered slowly, stir often. Tip-cook rice ahead of time and let cool.
- 3 eggs
- 1 tsp vanilla
- 1/2 to 3/4 cup heavy cream
- Mix everything together-set aside
- 2 1/2 cup flour
- 3/4 cup Crisco
- 2 tsp baking powder
- 3/4 cup sugar
- 1 tsp vanilla
- 3 eggs
- 1 tsp salt.
Preparation
Step 1
Make crust, roll out and fill two pie plates. Pour rice mixture into pie crusts.
Bake in preheated 350 degree oven 55 to 60 minutes, no more.
