Carolyn's Chicken Surprise

Ingredients

• 1/2 cup sour cream
• 1/2 cup mayo
• 2 tea tarragon-dried
• 2 tbls dried parsley
• 1 tea pepper
• 1 lemon
• paprika- for garnishing
• 3 boneless chicken beasts- cut into cutlets and pounded thin

Preparation

Step 1

COMBINE first five ingredients in small bowl
SPREAD cutlets out on a banking sheet in one layer
SMEAR 1/2 mixture over chicken
DRIZZLE with lemon juice and sprinkle with paprika
BROIL until bubbly and browned ( about 3 to 5 minutes)
REMOVE pan from oven.
TURN chicken cutlets over and repeat With remaining mixture
RETURN to broiler and repeat cooking process.

Excellent with white rice
