Beets with Walnuts and Blue Cheese

Ingredients

  • 4 medium beets (about 11/2 lbs.)
  • 2 TB. olive oil
  • 2 TB. oil (walnut oil-sunflower or almond would be good too)
  • 3 TB. red wine vinegar
  • 1/4 Cup chopped, roasted walnuts
  • 1/4 tsp. DILL WEED
  • 1/4 tsp. PENZEYS PEPPER
  • 2 oz. crumbled blue cheese or feta

Preparation

Step 1

Wash the beets. Pare off the ends and leaves and discard. Place the beets in a roasting pan. Drizzle with the olive oil and toss to coat. Roast at 350° for about 45 minutes. Let the beets cool and then peel, quarter and shred or grate.

In a serving bowl, combine the grated beets with the walnut oil, red wine vinegar, walnuts, DILL WEED and PEPPER. Toss to combine. Sprinkle with cheese and serve.
