Ingredients

  • Cookie:

  • 1

    cup soft butter

  • 1/3

    c 35% cream

  • 2

    cups sifted flour

  • Filling:

  • 3/4

    cup good quality White Chocolate, finely chopped

  • 1/3

    cup thickened 35% cream

  • 1/4

    cup Butter

  • 1/4 to 1/2

    cup chopped candy cane

Directions

Whip butter, add cream and beat well. Add flour. Refrigerate dough for 2 hours. Roll out to 1/8 inch thick and cut into rounds approximately 1 1/2" Place on cookie sheet and pierce with a fork. Sprinkle with sugar (coloured sugar can also be used) Bake 7-9 minutes at 375 degrees Filing: Place chocolate in a heatproof bowl. Combine cream and butter in a small saucepan over high heat. Bring to the boil. Remove from heat and immediately pour over the chocolate. Use a metal spoon to stir until chocolate melts and mixture is smooth. Add candy cane pieces and stir until mixed. Place in fridge for 20 minutes or until almost firm. Cookies may be frozen
