  • Sauce:
  • 4 Tablespoons Oliver Oil
  • 1 Tablespoon Butter
  • 1 Onion Slices
  • 1/2 cup dry fruit - finely diced
  • (you can use apricots, raisins, craisins soaked in white wine to soften)
  • 1 Tablespoon Toasted Pine Nuts
  • l Cup Marsala Wine
  • 2 oz. honey
  • 1/2 cup beef broth
  • 1/2 cup grana padano cheese grated
  • 3 Tablespoons ground biscotti
  • Watercress to garnish

Preparation

Step 1

Saute onion will soft. Then add the softened fruits and mix well.
Raise the heat and add nuts, marsala and vanilla extract.

Add honey and broth and reduce till it thickens.

Spoon over pumpkin ravioli and top with grated cheese and watercress
