Ingredients
- 2 c. flour
- 1/2 c. bran flakes
- 4 tbsp. milk powder
- 1 tbsp. baking powder
- 1/2 tsp. allspice
- 1/2 tsp. nutmeg
- 1/4 tsp. salt
- 1 tsp. cinnamon
- 3 eggs
- 3/4 c. brown sugar
- 3/4 c. milk
- 4 tbsp. oil
- 1 tsp. vanilla
- 1 c. grated raw carrots
- 1 c. grated unpeeled zucchini
- 1/2 c. chopped walnuts
Preparation
Step 1
Sift flour, spices, baking powder and salt together. Add bran flakes and milk powder. Stir well. Beat eggs, milk, oil, sugar and vanilla. Add carrots, zucchini and walnuts to egg mixture. Quickly stir wet ingredients into dry ingredients, stirring just enough to moisten flour. Batter should be thin. Spoon into 12 greased muffin cups. Bake at 375 degrees for about 20 minutes.
